What is nutritional yeast and how is it produced?
- It is grown on sugar sources (molasses) enriched with vitamins and minerals.
- The yeast grows by consuming the vitamin-enriched molasses.
- Aerobic conditions (oxygen respiration) are created by providing oxygen to ensure the yeast multiplies. Production takes place in a completely controlled environment to prevent cross-contamination and obtain a quality product.
- At the end of the growth period, it undergoes pasteurization to become inactive and is then dried.
- Once inactivated by heat, the yeast transforms into a food source containing B-complex vitamins and various minerals.
- It contains approximately 47% protein.
- Since the yeast is inactive, it is suitable for human consumption. However, because this yeast has lost its ability to multiply, it cannot be used for leavening dough. It is only suitable for nutritional use.

How do I use it?
Nutritional yeast can be used directly as a food or as a supplement to enrich nutritional content.
It has a cheesy taste. One serving for adults is approximately 1 tablespoon.
It can be sprinkled on pasta, added to pasta sauce, soups, salads, hot meals, snacks like popcorn, baked vegetable crisps, or various recipes like omelets to achieve a cheesy flavor.
It can be added to recipes such as homemade pastries, crackers, and savory muffins.
Due to its aroma, it can also be used in vegan cheese making.

Ingredients such as zinc and protein, as well as some B1, B2, B3, B5, and B6 vitamins, which you see in the nutritional value table of nutritional yeast, occur naturally during the yeast's formation process.
The remaining portion of these B vitamins and especially all of the B12 vitamin cannot be produced by the yeast itself. Therefore, at the beginning of the production stage, plant-derived (vegan) B12 and additional B complex vitamins are added to the sugar source (a type of molasses) that the yeast feeds on.
These added vitamins, as they pass through the yeast's own digestion and fermentation process while feeding on molasses, become more absorbable and an integral part of its own structure.
These vitamins are used throughout the food and health industry; they are vitamins isolated from nutrient extracts in a laboratory environment, where their molecules have been multiplied, and thus can also be referred to as synthetic.
No additional vitamins are added to the final product. However, these additional vitamins are added to the yeast's food, and the final product is formed as a result of the yeast consuming them and synthesizing them within its body.
To give an example: we can liken this situation to consuming the meat of a large animal that has grown by eating vitamin-enriched feed. (Although we don't particularly like to use this analogy for a vegan product, we can share this example to generally explain the process).

No, nutritional yeast flakes do not contain MSG (monosodium glutamate).
Nutritional yeast contains glutamic acid, a natural amino acid that gives it its umami flavor, but this is not the same as processed, synthetic MSG added to some foods.
Nutritional Yeast: Contains naturally occurring glutamic acid, an amino acid bound to proteins and processed differently by the body.
MSG: Is a synthetic flavor enhancer, a manufactured form of glutamic acid that has been chemically altered to become monosodium glutamate.
Flavor: Both provide a savory, umami flavor. Nutritional yeast gets its flavor from naturally occurring glutamates, not from added MSG.
Sodium: While nutritional yeast does not contain sodium, MSG is a type of sodium.
